1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
1/2 cup key lime juice
1 can (14 ounces) sweetened condensed milk
4 large egg yolks
1 teaspoon key lime zest

Instructions

Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until evenly mixed.
Press the crust mixture firmly into the prepared pan and bake for 15 minutes. Cool completely.
In a separate bowl, whisk egg yolks, sweetened condensed milk, key lime juice, and zest until smooth.
Pour the filling over the cooled crust and refrigerate for at least 2 hours or until set.
Lift the bar from the pan, slice into 16 pieces, and serve.

Notes

Use digestive biscuits or shortbread cookies as a graham cracker substitute.
Fresh key lime juice provides the brightest flavor; regular lime juice works in a pinch.
