Instructions
Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
In a stand mixer, cream the softened butter, granulated sugar, and brown sugar for 3 minutes until light and fluffy.
Add the eggs and vanilla extract, scraping down the bowl to ensure full incorporation.
In a separate bowl, whisk together the flour, baking powder, and half of the cinnamon.
Gradually fold the dry ingredients into the wet mixture until just combined.
Scoop large, consistent rounds of dough onto the prepared baking sheet.
Bake for 10 to 12 minutes until the edges are set but the centers remain soft.
Allow the cookies to cool completely before piping with the whipped cream cheese frosting and dusting with the remaining cinnamon.
