Ingredients
1 ½ cups all-purpose flour
1 ¾ cups granulated sugar (1 cup for crust, ¾ cup for filling)
1 cup unsalted butter, softened
2 tablespoons lemon zest (from 2–3 lemons)
3 large eggs
½ cup fresh lemon juice
Powdered sugar, for dusting
Instructions
Preheat oven to 325°F (165°C)
Mix 1 cup flour, 1 cup sugar, and ½ cup butter until crumbly
Press the crust into a parchment-lined 8×8-inch baking dish
Bake for 20 minutes
In a bowl, whisk ¾ cup sugar, 3 eggs until pale
Add 1 ¾ cups flour, ½ cup lemon juice, 2 tablespoons lemon zest, and remaining ½ cup butter
Pour filling over cooled crust
Bake 30-35 minutes until golden and firm
Cool completely before cutting into squares
Dust with powdered sugar
