1/4 cup cornstarch
1 teaspoon vanilla extract
Pinch salt

Instructions
Shake the can of full-fat coconut milk well.
In a saucepan, combine coconut milk, granulated sugar, cornstarch, vanilla extract, and a pinch of salt.
Whisk continuously over medium heat until the mixture thickens and begins to simmer, about 15 minutes.
Remove from heat and let cool to room temperature.
Chill in the refrigerator for at least 2 hours.
Transfer to serving bowls and garnish with unsweetened shredded coconut and fresh berries, if desired.
Serve chilled.
