Ingredients
2 cups ripe bananas, sliced 1/4″ thick
2 cups milk (dairy, oat, or coconut)
1/4 cup sugar or maple syrup (vegan option)
18–24 vanilla wafers
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
Pinch of nutmeg (optional, for garnish)
Instructions
Peel and slice bananas into 1/4″ rounds
Blend milk, sugar, vanilla extract, and cinnamon until smooth
Chill custard mixture in sealed container for 2 hours
Spread half the bananas in a 9″ diameter bowl
Add single layer of vanilla wafers, slightly overlapping
Pour half the chilled custard over wafers
Repeat with remaining bananas, wafers, and custard
Press plastic wrap against custard surface
Chill for 4+ hours until fully set
Notes
Use overripe bananas with brown spots for maximum sweetness
Chilling custard ahead prevents mushy fruit
Soft vanilla wafiers yield better texture
Add 1/4 teaspoon nutmeg on top for warmth
