Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
¼ cup milk
1 tablespoon ground cinnamon
¼ cup packed brown sugar
Instructions
Preheat oven to 350°F (175°C)
Line a 9×13-inch baking pan with parchment paper
In a bowl, whisk flour, baking powder, and salt
In another bowl, cream butter and 1 cup sugar until light and fluffy
Add eggs one at a time, beating well after each
Stir in milk
Mix wet ingredients into dry until combined
Press half the batter into the pan as a base
Sprinkle 1 tablespoon cinnamon and ¼ cup brown sugar evenly over the batter
Top with remaining batter, spreading to cover
Add ½ teaspoon cinnamon and swirl with a wooden skewer
Bake 35 minutes until golden and a toothpick comes out clean
Cool completely before slicing
Notes
Store in an airtight container at room temperature for up to 3 days
For extra moisture, brush with 2 tablespoons warm maple syrup after cooling
Substitute dairy-free butter and milk for vegan version
