2 pounds cream cheese, softened
1 ½ cups granulated sugar
4 large eggs, room temperature
1 cup sour cream, full-fat
1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips, melted
Instructions
Preheat oven to 325°F (160°C)
Mix chocolate cookie crumbs and melted butter in a bowl
Press mixture into a 9-inch springform pan
In a large bowl, beat cream cheese until smooth
Gradually add sugar until fully incorporated
Add eggs one at a time, beating well after each addition
Stir in sour cream and vanilla
Sift cocoa powder into the mixture
Fold in melted chocolate chips
Pour batter into prepared crust
Place pan on a baking sheet
Bake for 50-60 minutes, until center is just set
Turn off oven, crack door slightly, and let cool for 1 hour
Refrigerate for 6-8 hours or overnight
Release springform and serve chilled
