Ingredients
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tbsp cinnamon
1/2 tsp salt
3/4 cup unsweetened applesauce
2 large eggs, room temperature
2 tsp vanilla extract
1 cup old-fashioned oats
2 cups grated carrots, fresh
1/2 cup chopped walnuts
Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch pan with non-stick spray.
In a bowl, whisk flour, baking powder, baking soda, cinnamon, salt, and oats until combined.
Beat applesauce, eggs, and vanilla extract in a separate bowl until smooth.
Gently fold wet ingredients into dry mixture until just combined, avoiding overmixing.
Stir in grated carrots and walnuts using a spatula until evenly distributed.
Pour batter into prepared pan. Smooth surface. Bake 30-35 minutes until a toothpick comes out with moist crumbs.
Notes
Substitute whole wheat flour for denser texture.
Swap walnuts for pecans or sunflower seeds for nut-free.
Store in an airtight container in the refrigerator for up to 5 days.
Caramelized topping adds visual and textural appeal.
