Graham cracker crumbs 1½ cups
Granulated sugar (for crust) ¼ cup

Apples 4 medium
Unsalted butter (for filling) 2 tablespoons
Light brown sugar, packed ¼ cup
Ground cinnamon 1 teaspoon
Ground nutmeg ½ teaspoon
Lemon juice 1 tablespoon
Cream cheese, softened 8 ounces
Granulated sugar (for topping) 2 tablespoons
Vanilla extract ½ teaspoon
Instructions
Preheat oven to 325°F (160°C) if pre-baking crusts (optional). Mix graham cracker crumbs, crust sugar, and melted butter; press into 8 silicone molds or paper cupcake liners. In a skillet, melt filling butter over medium heat; add sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until apples soften (7-9 minutes). In a bowl, beat cream cheese, topping sugar, and vanilla until smooth. Spread cream cheese mixture into crusts, then top with caramelized apple filling. Chill for 30 minutes before serving.
