Ingredients
8 oz cream cheese, softened to room temperature
1 cup fresh blueberries, washed and dried
2 sheets puff pastry, thawed completely
1/4 cup granulated sugar
1 tsp vanilla extract
1 large egg, beaten for egg wash
Instructions
Preheat your oven to 400°F (200°C).
In a medium bowl, whisk together the cream cheese, sugar, and vanilla extract until smooth.
Cut the thawed puff pastry sheets into two-inch squares.
Place one teaspoon of the cream cheese filling into the center of each square.
Press three fresh blueberries gently into the top of each cream cheese portion.
Fold the corners of the pastry squares toward the center to form a pouch.
Brush the edges of the pastry with the prepared egg wash.
Place the bites on a parchment-lined baking sheet and bake for 20 minutes, or until golden brown and puffed.
Notes
Ensure the blueberries are completely dry after washing to prevent excess moisture from softening the pastry. You can sprinkle a little extra sugar over the tops before baking if desired for a crunchier finish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
