Ingredients
2 ½ cups all-purpose flour
1 ½ cups granulated sugar
2 teaspoons baking powder
½ teaspoon salt
½ cup (1 stick) unsalted butter, softened
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup whole milk or buttermilk
3 cups fresh blueberries, washed and patted dry
½ cup packed brown sugar, for streusel
½ cup all-purpose flour, for streusel
¼ cup unsalted butter, softened, for streusel
1 teaspoon ground cinnamon, for streusel
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a bowl, whisk together 2 ½ cups flour, 1 ½ cups sugar, baking powder, and salt.
In another bowl, cream ½ cup softened butter, 2 eggs, vanilla extract, and 1 cup milk until smooth.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Fold in 3 cups blueberries and a pinch of cinnamon.
In a separate bowl, mix streusel ingredients: brown sugar, ½ cup flour, ¼ cup cold butter, and 1 teaspoon cinnamon until crumbly.
Spread batter in prepared pan. Sprinkle streusel evenly over top.
Bake 50 minutes or until golden and toothpick comes out clean. Cool fully before serving.
Notes
Use cake flour for extra tenderness if available
Adjust blueberry sugar to taste (320-340g sweetness total)
Cool completely before slicing for clean layers
Store in airtight container at room temperature for 1-2 days
