Ingredients
1 ½ cups chocolate wafer cookie crumbs (6 ounces)
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
4 (8-ounce) packages cream cheese, softened
1 ½ cups granulated sugar
¾ cup unsweetened cocoa powder
1 teaspoon instant espresso powder (optional)
½ teaspoon salt
5 large eggs, room temperature
1 cup sour cream
Instructions
Preheat oven to 325°F (160°C)
In a bowl, combine chocolate wafer crumbs, ¼ cup sugar, and melted butter
Press mixture into a 9-inch springform pan, creating a crust
In a separate bowl, beat cream cheese with 1 ½ cups sugar until smooth
Mix in cocoa powder, espresso powder (if using), and salt
Add eggs one at a time, beating well after each addition
Stir in sour cream until fully combined
Pour filling over crust
Bake for 45 minutes or until center is almost set
Turn off oven and let cool for 1 hour before removing
Chill for at least 4 hours or overnight before serving
Notes
For a vegan version, substitute cream cheese with tofu-based alternatives and use egg replacer
Freeze cooled, baked crust if needed
Avoid overmixing filling to prevent cracks
Run a knife around the pan edges before unmolding
