34 ripe medium bananas, mashed
1 1/2 cups graham cracker crumbs
1 1/2 cups granulated sugar
2 3/4 cups all-purpose flour
1/2 cup unsalted butter, softened
1/2 tsp salt
8 oz cream cheese, softened
1/4 cup milk for crust
1/4 cup milk for pudding
1/2 tsp vanilla extract
1 pouch (3.4 oz/100g) instant vanilla pudding mix
1 cup whipped topping (store-bought or homemade)
3 cups sliced strawberries (1 pound, washed and hulled)
1/4 tsp banana extract (optional)
1 tbsp cornstarch (optional, for thicker pudding)

Instructions

Preheat oven to 350°F (180°C)
In large bowl, mix 1 1/2 cups sugar, 2 3/4 cups flour, 1 1/2 cups graham cracker crumbs, 1/2 cup butter, 1/4 cup milk, 1/2 tsp salt, and 1/2 tsp vanilla extract to form crust
Press mixture into bottom of 9×13-inch pan; bake 15-18 minutes, or until golden. Let cool completely
In medium bowl, combine pudding mix and 2 cups milk. Whisk until thick; refrigerate 20-30 minutes to chill
Meanwhile, mash 3-4 bananas in separate bowl, stirring in 1/4 tsp banana extract (optional) to enhance flavor
Spread half of pudding into cooled crust. Layer half of mashed bananas and refrigerate 15-20 minutes
In another bowl, beat cream cheese and 2 tbsp granulated sugar until smooth
Spread cream cheese mixture over banana layer
Add remaining pudding and banana layer
Top with sliced strawberries and whipped topping
Chill 4 hours before serving

Notes

The classic recipe uses banana liqueur, but we substitute 2 cups of mashed ripe bananas for a halal/non-alcoholic version
Replace graham cracks with almond flour or crushed graham crackers for a nut-free option
Use homemade whipped cream with 1 cup whipping cream, 1/2 cup confectioners’ sugar, and 1 1/4 tsp vanilla extract for a fresh option
Serve chilled, best refrigerated 4-6 hours
Store in airtight container for up to 2 days
