Ingredients
1 1/2 cups crushed vanilla wafers (can substitute with graham crackers)
1/3 cup (85g) melted unsalted butter (use clarified ghee for halal)
1 (4 oz) package banana pudding mix (vanilla flavor recommended)
1 1/2 cups heavy cream (can substitute with coconut cream)
8 oz (227g) large cream cheese (full-fat preferred)
1/2 cup granulated sugar
3 medium frozen ripe bananas (peel before freezing for easier use)
1/4 tsp vanilla extract
1 1/2 cups cold milk (for pudding layer)
1/2 cup milk (for banana layer)
Instructions
Combine crushed vanilla wafers and melted butter until evenly moistened.
Press mixture into springform pan using bottom of measuring cup for even compression.
Whisk pudding mix with 1 1/2 cups cold milk and 1/4 cup sugar until thickened.
Blend 3 thawed bananas with 1/2 cup milk and 1/4 tsp vanilla extract.
Add 1/3 of pudding layer, then banana mixture, repeating until all ingredients are used.
Cover and refrigerate for at least 3 hours before slicing into 12 pieces.
Notes
Use melted cold butter (40°F) for crumb mixture to avoid overworking the crust
Freeze banana slices for 20 minutes for smoother blending results
Allow pudding layer to set in fridge for 15 minutes before adding banana layer
Use tempered springform pans to prevent condensation on surface
