Ingredients
1 cup unsalted butter, melted for brownies
1 ½ cups granulated sugar, divided
3 large eggs, room temperature
2 teaspoons vanilla extract, divided
2 ripe bananas, mashed (about 1 cup)
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup dark chocolate chips or chunks
1 package (3.4 oz) vanilla pudding mix (non-dairy if preferred)
1 ½ cups milk
1/2 teaspoon vanilla bean seeds or instant espresso powder (for depth)
Instructions
Preheat oven to 350°F (180°C)
Line a 9×13-inch baking dish with parchment paper
Melt 1 cup butter for brownie layer
Mix ¾ cup sugar, eggs, 1 tsp vanilla, and mashed bananas for brownie batter
Dissolve cocoa powder in melted butter before adding to bowl
Add flour and chocolate chips to form sticky brownie dough
Press dough into pan using hands
Beat remaining ¾ cup sugar, pudding mix, 1 tsp vanilla, and milk until thickened
Sprinkle ½ cup sugar over pudding to create custard-style topping
Spread pudding layer smoothly on brownies
Bake 30-35 minutes until edges darken and center is just set
Cool completely before cutting into squares
Notes
Use ripe bananas with brown spots for maximum sweetness
Pudding becomes custard-like when cooled
Parchment paper ensures clean slices
Optional: add a dollop of vanilla yogurt on top
Cover leftovers in airtight container
