Ingredients
Very Ripe Bananas
3 large
Unsalted Butter
1/3 cup melted
All-Purpose Flour
1 1/2 cups sifted
Granulated Sugar
3/4 cup
Large Egg
1, beaten
Baking Soda
1 teaspoon
Salt
Pinch
Vanilla Extract
1 teaspoon
Instructions
Preheat oven to 350°F (180°C)
Line a 9×5-inch loaf pan with parchment paper
Mash bananas with a fork until mostly smooth
Mix in melted butter, sugar, egg, and vanilla
Whisk flour, baking soda, and salt
Gradually stir dry ingredients into wet mixture
Scrape batter into prepared pan
Bake 50-60 minutes until golden and a toothpick inserted comes out clean
Cool in pan 10 minutes, then transfer to wire rack to cool completely
Slice and serve
Notes
Use brown sugar for a deeper flavor
For vegan: omit egg and use flax egg (1 tbsp flax meal + 3 tbsp water)
Plantains can replace bananas in a pinch
Cool completely before slicing for clean cuts
