4 cups Honeycrisp apples, peeled and sliced 1/4 inch thick
3/4 cup granulated cane sugar
1.5 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
2 tbsp apple cider
2 sheets pie crust
Heavy cream and sugar for glaze
Instructions
Preheat your oven to 400°F (200°C).
Peel and slice all apples into uniform segments.
In a large bowl, combine sugar, cinnamon, nutmeg, and ginger.
Toss the apple slices with the dry sugar mixture until thoroughly coated.
Simmer the fruit in a pan over medium heat for five minutes to activate the natural pectins.
Roll out the bottom pie crust and place it into a greased nine-inch pie dish.
Pour the prepared apple filling evenly across the bottom crust.
Lay the second crust over the top and trim the edges, crimping tightly with a fork.
Brush the top crust with a mixture of heavy cream and sugar.
Bake for 50 minutes until golden brown and bubbling.
