Ingredients
Fresh Strawberries (1 pound, 20-24 medium)
Dark Chocolate Chips (1 cup, 6 ounces)
Coconut Oil (2 tablespoons, divided)
White Chocolate Chips (1/2 cup, 3 ounces)
Graham Crackers (4-5 full sheets, crushed into fine crumbs)
Instructions
Wash and dry strawberries; remove caps with a paring knife
Insert popsicle sticks into strawberry centers
Melt dark chocolate chips with 1 tablespoon coconut oil in microwave or double boiler (stir until smooth)
Dip each strawberry into melted chocolate, coating fully
While chocolate is still wet, sprinkle crushed graham crackers over each pop
Let sit at room temperature for 10 minutes to set
Melt white chocolate with remaining 1 tablespoon coconut oil
Drizzle over each pop, decorating as desired
Freeze for 2 hours or until fully hardened
Store in airtight container in freezer
Notes
Ensure strawberries are completely dry before coating to prevent ice crystals
Use 70%+ dark chocolate for the best flavor
For extra texture, consider pressing nuts/cookies into crumbs while setting
Substitute vegan chocolate for plant-based version
