Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup vegetable oil or melted coconut oil
3/4 cup granulated sugar
1/2 cup brown sugar
2 tsp vanilla extract
1 1/2 cups finely grated zucchini (do not squeeze)
1 cup chocolate chips or chunks
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
2. In a large bowl, whisk together flour, cocoa, baking soda, baking powder, and salt.
3. In another bowl, combine oil, sugars, and vanilla extract until smooth.
4. Add grated zucchini to the wet mixture and let sit for 5 minutes.
5. Fold dry ingredients into the wet mixture until just combined.
6. Stir in chocolate chips.
7. Pour batter into the prepared pan and spread evenly.
8. Bake for 25–35 minutes or until a toothpick inserted comes out with moist crumbs.
9. Cool completely before slicing or adding frosting.
Notes
For a vegan version, replace eggs with applesauce or mashed banana.
Use gluten-free flour with xanthan gum for a coeliac-friendly version.
Top with cream cheese frosting and berries for an elegant finish.
