2 lbs Yukon Gold Potatoes (washed, halved)

2 tbsp olive oil

2 garlic cloves (minced)

1 tsp sea salt

1 tsp rosemary (fresh or dried)

1/2 tsp smoked paprika

Instructions

1. Preheat oven to 425°F (220°C).

2. Boil the halved potatoes for 7 minutes in salted water.

3. Drain and let steam dry for 5 minutes.

4. Toss with olive oil, garlic, rosemary, salt, and paprika.

5. Place cut-side down on a parchment-lined tray.

6. Roast for 25–30 minutes, flipping halfway.

7. Serve hot with your favorite dip or protein.
