Ingredients
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup whole milk
1 tbsp instant espresso powder
1/2 tsp vanilla extract
6 tbsp unsalted butter, softened
3/4 cup granulated sugar
1 large egg

Filling:
8 oz mascarpone cheese
4 oz cream cheese
1/2 cup powdered sugar
1 tbsp Kahlua (or strong espresso)
1 tsp instant espresso powder
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.
3. In another small bowl, stir milk with espresso powder and vanilla.
4. Cream butter and sugar in a large bowl, then beat in the egg.
5. Gradually mix in the dry ingredients and milk mixture until smooth.
6. Scoop small rounds onto baking sheets and bake for 12–14 minutes. Let cool.
7. To make the filling, beat mascarpone, cream cheese, sugar, vanilla, and dissolved espresso until fluffy.
8. Pair cookies by size, fill with mascarpone cream, and sandwich together.
9. Dust with powdered sugar before serving for a classic tiramisu finish.
Notes
For best results, use cold mascarpone and cream cheese when mixing.
Whoopie pies can be stored in the fridge for up to 3 days.
