Ingredients
1 1/2 cups strong brewed coffee
1 tbsp granulated sugar
2 tsp dark rum (optional)
1/2 tsp vanilla extract
1/2 cup cold heavy cream
1/2 cup + 2 tbsp granulated sugar
5 large egg yolks
16 oz mascarpone cheese
1 tsp vanilla extract
1/4 tsp kosher salt
18 crisp ladyfingers (savoiardi)
1 tbsp unsweetened cocoa powder
4 oz dark chocolate (optional)
Instructions
1. Combine brewed coffee, sugar, rum, and vanilla in a bowl. Stir until sugar dissolves.
2. Whip heavy cream with 2 tbsp sugar until stiff peaks form. Chill.
3. Whisk egg yolks with 1/2 cup sugar until pale and thick.
4. Gently fold in the mascarpone until smooth and creamy.
5. Fold in whipped cream until light and fluffy.
6. Dip ladyfingers quickly in the coffee soak. Line a baking dish with half.
7. Spread half the mascarpone mixture over the ladyfingers. Smooth evenly.
8. Repeat with remaining soaked ladyfingers and cream mixture.
9. Dust with cocoa powder.
10. Chill for at least 4 hours or overnight. Serve with chocolate shavings if desired.
Notes
To make it alcohol-free, omit the rum and use extra vanilla or almond extract.
Use decaf coffee for a caffeine-free version.
Best made a day ahead for optimal flavor and texture.
