2 tbsp olive oil

1 tsp sea salt

1/2 tsp black pepper

1 lemon (zest and juice)

1 tbsp chopped fresh parsley


Instructions

1. Preheat grill or cast iron skillet to high.

2. Pat swordfish dry and brush with olive oil.

3. Season both sides with salt, pepper, and lemon zest.

4. Grill 3–4 minutes per side, or until just opaque.

5. Remove from heat and rest for 3 minutes.

6. Top with fresh parsley and a squeeze of lemon juice.

Notes

Don’t overcook—swordfish dries out quickly.
