Ingredients
2 cups fresh strawberries, sliced
1 tbsp lemon juice
2 tbsp sugar
1 cup heavy cream
1/2 cup powdered sugar
8 oz mascarpone cheese
1 tsp vanilla extract
20 ladyfingers
Instructions
1. Slice strawberries and mix with lemon juice and sugar. Let sit to form syrup.
2. Whip cream until soft peaks form.
3. Blend mascarpone, vanilla, and powdered sugar until smooth.
4. Fold whipped cream into mascarpone mixture.
5. Dip ladyfingers in strawberry syrup and layer in dish.
6. Add cream layer, then strawberry slices. Repeat.
7. Finish with cream layer on top.
8. Chill at least 4 hours or overnight.
9. Garnish with strawberries before serving.
Notes
Use Greek yogurt instead of mascarpone for a lighter version.
Coconut cream works for dairy-free alternative.
Pairs well with lemon water or mint tea.
