Ingredients
1 vanilla or sponge cake, sliced in 2–3 layers
2 cups fresh strawberries, sliced
2 tablespoons granulated sugar
8 oz full-fat cream cheese
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Zest of 1 lemon (optional)
Instructions
1. Slice the strawberries and mix with granulated sugar. Let sit for 15–20 minutes to release juice.
2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
3. Whip the heavy cream until soft peaks form and fold it into the cream cheese mix.
4. Slice your cake layers with a serrated knife.
5. Assemble: cake layer → cheesecake cream → strawberries → repeat. Press gently.
6. Chill for 1–2 hours in the fridge to set before serving.
Notes
Use full-fat cream cheese for best consistency.
Let the cream cheese soften at room temperature before beating.
Don’t freeze assembled cake—only freeze base layers.
For a mousse-style filling, fold more whipped cream into the mix.
Add strawberry jam or syrup for deeper flavor.
