Ingredients
1 cup unsalted butter, room temperature
1 ½ cups granulated sugar
3 large eggs
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon vanilla extract
½ cup whole milk or buttermilk
Optional: citrus zest, chopped nuts, fruit preserves
Instructions
1. Preheat your oven to 350°F (175°C).
2. Grease a loaf pan or baking dish and line with parchment.
3. Cream the butter and sugar until light and fluffy.
4. Add eggs one at a time, mixing until just combined.
5. Mix in vanilla extract and optional citrus zest or flavorings.
6. In a separate bowl, whisk together flour and salt.
7. Alternate adding the dry ingredients and milk into the wet mixture.
8. Stir just until combined — do not overmix.
9. Pour into prepared pan and smooth the top.
10. Bake for 45–55 minutes, until golden and a toothpick comes out clean.
11. Cool before slicing. Serve plain or with fruit and cream.
Notes
This cake can be made ahead and stored at room temp for 2–3 days.
For added richness, use buttermilk instead of regular milk.
Pairs beautifully with creamy desserts or fresh berries.
