Ingredients
**Cake**
2½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup unsalted butter (room temperature)
1¾ cups granulated sugar
4 large eggs
1 cup whole milk
1 teaspoon vanilla extract
**Frosting & Finish**
8 oz cream cheese, softened
½ cup unsalted butter
3½ cups powdered sugar
1 teaspoon vanilla extract
2½ cups sweetened shredded coconut
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round pans.
2. Whisk together flour, baking powder, and salt.
3. In a large bowl, cream butter and sugar until pale and fluffy.
4. Add eggs one at a time, then stir in vanilla extract.
5. Alternate adding flour mixture and milk, starting and ending with flour.
6. Divide batter into pans and bake for 25–30 minutes.
7. Let cakes cool completely.
8. Beat cream cheese and butter for frosting, then add powdered sugar and vanilla.
9. Frost the cooled cake and cover entirely with shredded coconut.
10. Chill briefly before serving.
Notes
Use fine shredded coconut for a snowy look.
For added moisture, replace ¼ cup milk with coconut milk.
Add white chocolate curls beneath coconut for a festive touch.
Cake slices freeze well — store wrapped for up to 2 months.
