Ingredients
For the Cookie Base:
1 ½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter (softened)
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 ½ tsp vanilla extract
For the Topping:
¾ cup caramel sauce (store-bought or homemade)
1 cup sweetened shredded coconut (toasted)
½ cup chocolate chips or melted chocolate for drizzling
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish or cast-iron skillet.
2. In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
3. Add egg and vanilla extract; beat until combined.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Press cookie dough evenly into the prepared pan.
7. Bake for 20–25 minutes, until edges are golden and center is slightly soft.
8. While still warm, spread caramel sauce over the top of the cookie base.
9. Sprinkle toasted coconut evenly over the caramel layer.
10. Drizzle melted chocolate across the top in lines or swirls.
11. Let set for 15–20 minutes before slicing and serving.
Notes
Toast the coconut in a dry pan over medium heat until golden.
For a more indulgent version, use dark chocolate or salted caramel.
Serve warm with a scoop of vanilla ice cream for a truly decadent dessert.
