Ingredients
2 ripe but firm pears (Bosc or Anjou), thinly sliced
1 tablespoon olive oil
Pinch of salt
2 flatbreads or naan
6 oz Brie cheese, sliced
½ cup fresh or dried cranberries
Honey, for drizzling
Fresh thyme or rosemary, optional
Crushed pecans or walnuts, optional
Instructions
1. Preheat oven to 400°F (200°C). Toss pear slices with olive oil and a pinch of salt. Roast for 15–20 minutes until tender and caramelized.
2. Place flatbreads on a baking sheet and brush lightly with olive oil.
3. Layer Brie slices evenly across each flatbread. Top with roasted pears and cranberries.
4. Bake at 400°F for 10–12 minutes until Brie is melted and flatbread is crisp at the edges.
5. Drizzle with honey and garnish with herbs and crushed nuts if using. Slice and serve warm.
Notes
Use dried cranberries if fresh are not available.
Brie rind is edible — keep it on or remove as preferred.
Add prosciutto for a heartier version.
Pairs beautifully with creamy desserts or coffee-based cookies.
