Ingredients
1 1/4 cups cake flour
1/4 cup + 2 tbsp almond flour
6 eggs
4 egg yolks
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 cups whole milk
1/2 cup granulated sugar (divided)
1 split vanilla bean or 2 tsp vanilla extract
3 egg yolks
3 tbsp cornstarch
2 cups heavy cream
1/3 cup powdered sugar
1/2 cup seedless raspberry jam
2 (7oz) packages marzipan
Food coloring (optional)
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F. Prepare 3 pans. Beat eggs and sugar, fold in flour and butter. Bake 12–15 minutes.
2. Heat milk and vanilla. Temper egg yolks with sugar and cornstarch. Cook until thickened. Stir in butter and chill.
3. Whip cream with powdered sugar and vanilla until stiff peaks form.
4. Layer cake with jam, custard, and whipped cream. Shape into dome. Chill for 30 minutes.
5. Roll out marzipan and cover the dome carefully. Trim excess and dust with powdered sugar. Optionally, decorate with a marzipan rose.
Notes
You can prepare the sponge and custard one day ahead.
Use food coloring to tint marzipan green or pink.
