Ingredients
1 cup mascarpone cheese
1/2 cup pistachio paste
1 cup heavy cream
1/2 cup powdered sugar
24 ladyfingers
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup chopped roasted pistachios
Instructions
1. Whip the heavy cream with powdered sugar until soft peaks form.
2. In another bowl, mix mascarpone and pistachio paste until smooth.
3. Fold the whipped cream into the pistachio-mascarpone mixture gently.
4. In a shallow bowl, mix vanilla and almond extract with 1/2 cup of water.
5. Quickly dip ladyfingers into the liquid and arrange in the bottom of a dish.
6. Spread a layer of pistachio cream over the ladyfingers.
7. Repeat layers until the dish is full, ending with cream on top.
8. Chill for at least 6 hours or overnight.
9. Garnish with chopped roasted pistachios before serving.
Notes
For a gluten-free version, use gluten-free ladyfingers.
You can replace mascarpone with a mix of cream cheese and Greek yogurt.
Best served chilled and made the day before for optimal flavor.
