Ingredients
1 cup old-fashioned oats
1 1/4 cups boiling water
1 1/2 cups brown sugar
2 large eggs
1/2 cup melted butter
1 tsp vanilla extract
1 1/3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Instructions
1. Preheat oven to 350°F. Grease a 9×13-inch pan.
2. Pour boiling water over oats. Let soak 15 minutes.
3. In a bowl, beat sugar, eggs, butter, and vanilla.
4. Add soaked oats and mix well.
5. In a second bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
6. Combine wet and dry mixtures until smooth.
7. Pour into pan and bake for 35–40 minutes.
8. Optional: add broiled topping after baking.
Notes
This cake keeps well for 3 days at room temperature.
Serve warm or cold. Freeze slices individually for later.
