1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 cups unsalted cream cheese, softened
3/4 cup granulated sugar
1 cup cottage cheese, chilled
1 cup whipped cream or canned whipped topping
6–8 fresh strawberries (sliced)
1 tsp vanilla extract (optional)
Instructions
Compact graham cracker crumbs mixed with melted butter in a springform pan.
In a bowl, beat cream cheese and sugar until smooth. Fold in chilled cottage cheese until well combined.
Pour the filling mixture into the prepared crust and smooth the surface.
Top with whipped cream and scatter sliced strawberries as desired.
Refrigerate for at least 4 hours before serving.
Notes
For a vegan option, replace graham crackers with 1/2 cup almond flour and 2 tbsp maple syrup, and use 1 cup cashew-based vegan cream cheese mixed with 1/2 cup coconut milk.
Add a thin layer of strained Greek yogurt with lemon zest in the crust for extra tang.
Secure the pan with plastic wrap during refrigeration to prevent sogginess.
Individual serving sizes can be made in mason jars or ramekins for convenient portioning.
