2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
16 oz full-fat cream cheese, softened
1/2 cup granulated sugar
1 cup heavy cream
1 tsp certified halal vanilla extract
3 cups strawberries, chopped
1/2 cup whipped cream (optional for topping)
Instructions
Prepare the crust: In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into a 9-inch pie dish. Freeze for 20 minutes.
Make the cheesecake layer: In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Fold in whipped cream until silky. Spread half of the mixture over the chilled crust.
Build layers: Top the cream cheese layer with chopped strawberries and the remaining whipped cream mixture. Freeze or refrigerate for 1 hour.
Chill and serve: Refrigerate overnight to set. Garnish with fresh strawberries and additional whipped cream before serving.
Notes
Chill utensils and bowls in advance to prevent butter from melting.
For juicy strawberries, sprinkle a pinch of cornstarch to absorb excess liquid.
Substitute granulated sugar with maple syrup or agave nectar for a natural sweetener.
