2 ½ cups all-purpose flour
3 cups granulated sugar
1 ½ teaspoons baking soda
1 teaspoon salt
1 ½ cups buttermilk
1 ½ cups strong brewed coffee
¾ cup molasses
3 large eggs
2 cups semisweet chocolate chips
2 teaspoons pure vanilla extract
1 cup unsalted butter, softened
1 cup packed brown sugar
1 cup whole milk
¾ cup cocoa powder
1 teaspoon ground cinnamon
Instructions
Preheat oven to 350°F. Grease three 8-inch round cake pans and line with parchment paper.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a separate bowl, mix buttermilk, coffee, molasses, eggs, and vanilla until fully combined.
Gradually add wet ingredients to dry mixture, folding in chocolate chips.
Divide batter evenly among pans and bake 18-20 minutes until toothpick is clean.
Melt butter and brown sugar in a saucepan over medium heat.
Stir in milk, cocoa powder, and cinnamon until smooth.
Bring to a gentle boil, then simmer 5 minutes, stirring constantly.
Place cooled cake layers on a serving plate. Spread glaze between layers and frost the exterior.
Notes
Use room-temperature buttermilk and eggs for smoother batter
Allow glaze to cool slightly before spreading for ideal consistency
