This mandarin orange cake recipe is moist, citrusy, and full of nostalgic flavor. Made with canned mandarins and simple ingredients, it’s a sunshine-filled dessert that’s perfect for any occasion.
Ingredients
1 box yellow or white cake mix
4 large eggs
1/2 cup vegetable oil
1 can (15 oz) mandarin oranges with juice
1 tsp vanilla extract
Optional: orange zest for extra flavor
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
2. In a large mixing bowl, combine the cake mix, eggs, oil, and vanilla extract.
3. Add the entire can of mandarin oranges with juice. Lightly mash the oranges with a fork.
4. Beat the mixture until well combined but still slightly textured.
5. Pour the batter into the prepared pan and smooth the top.
6. Bake for 30–35 minutes or until a toothpick comes out clean.
7. Let cool completely before serving or frosting with orange glaze or whipped topping.
8. Refrigerate leftovers in an airtight container for up to 4 days.
Notes
For a brighter flavor, add freshly grated orange zest to the batter.
This cake can also be baked in two round pans and layered.
Pairs well with pineapple topping, whipped cream, or citrus glaze.
Let the cake cool completely before adding toppings to prevent melting.
