Instructions
Sift 1/4 cup flour into 4 large egg whites in a chilled mixing bowl
Add 1 cup sugar and 1/4 tsp salt; beat on medium-low speed for 3 minutes
Gradually pour in 2/3 cup cold lemon juice while continuing to whip
Transfer mixture to a parchment-lined 9-inch springform pan
Pat down with a spatula to create an even base
Chill for 1 hour until set
Notes
Chill bowl/attachments 20 minutes before mixing for stable egg whites
Measure lemon juice with a digital scale for consistency
Tap parchment paper on counter to remove air bubbles
For vegan version: Substitute sugar with 1 1/4 cups maple syrup
