This Ice Cream Tiramisu Cake is a no-bake, frozen twist on the Italian classic. With layers of espresso-soaked ladyfingers, vanilla gelato, and fluffy mascarpone cream, it’s perfect for summer birthdays, BBQs, or dinner parties.

1 package ladyfingers (Savoiardi)

1 cup espresso or strong coffee (cooled)

1 quart vanilla ice cream (softened)

8 oz mascarpone cheese

1 cup heavy cream (whipped)

23 tbsp sugar or maple syrup

2 tbsp cocoa powder (for dusting)

Optional: 1–2 tbsp rum or coffee liqueur

Optional: chocolate syrup or chocolate shavings for topping

Instructions

1. Brew espresso and let it cool. Optionally add rum or coffee liqueur.

2. Quickly dip ladyfingers one by one into espresso (don’t oversoak).

3. Layer soaked ladyfingers into the bottom of a parchment-lined loaf or springform pan.

4. Spread a layer of softened vanilla ice cream over the ladyfingers.

5. In a bowl, whip mascarpone, cream, sugar, and vanilla until fluffy. Spread over ice cream.

6. Repeat layering: ladyfingers, ice cream, mascarpone cream.

7. Cover and freeze for at least 6 hours, preferably overnight.

8. Before serving, dust with cocoa powder and top with chocolate syrup or shavings.

9. Let rest at room temperature for 10–15 minutes before slicing.

Notes

Use decaf espresso for a kid-friendly version.

Swap vanilla ice cream with coffee or chocolate for flavor variation.

Line pan with parchment paper for easy removal.

Freeze in a springform pan for clean slicing and elegant serving.

Top with berries or fruit for a fresh twist.
