Ingredients
1 1/2 cups all-purpose flour
1 cup unsalted butter, softened
1 cup granulated sugar
2 large room-temperature eggs
1 cup buttermilk
1 tsp non-alcoholic vanilla extract
1/4 tsp salt
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch round or square baking dish
In a large bowl, sift flour and salt. Set aside
Whisk butter and sugar until light and fluffy, 4-5 minutes
Beat in eggs one at a time, then stir in buttermilk and vanilla
Gradually fold dry ingredients into the wet mixture using a hand whisk
Pour batter into prepared pan and bake 35 minutes
Insert thermometer: cake is done at 160°F in center
Cool completely before slicing
Notes
Use a glass or metal bowl for mixing
Thaw frozen buttermilk in microwave, not at room temperature
Rotate cake after 20 minutes for even browning
Store in plastic wrap within 30 minutes of cooling
For vegan: substitute buttermilk with non-dairy yogurt
Optional glaze: mix 1/2 cup powdered sugar with 1 tsp non-alcoholic orange extract
