Instructions
1. Preheat oven to 350°F.
2. Grease and line a standard loaf pan.
3. Soak oats in warm milk for 10 minutes.
4. Whisk flour, baking powder, baking soda, cinnamon, and salt in a bowl.
5. In a separate bowl, mix honey, brown sugar, butter, eggs, and vanilla.
6. Combine the wet and dry ingredients gently.
7. Fold in the soaked oats.
8. Pour the batter into the prepared pan and smooth the top.
9. Sprinkle with extra oats and cinnamon sugar if desired.
10. Bake for 45–55 minutes until a toothpick comes out clean.
11. Let cool slightly before slicing and serving.

• Soaking oats in warm milk makes the crumb softer and prevents dryness.
