Ingredients
2 3/4 cups all-purpose flour
3/4 cup unsalted butter, softened
1/2 cup brown sugar
2/3 cup molasses
1 large egg
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon salt
Instructions
1. In a large bowl, cream butter and brown sugar until fluffy.
2. Add molasses and egg; mix until well combined.
3. In another bowl, whisk flour, baking soda, salt, and spices.
4. Combine wet and dry ingredients into a dough.
5. Divide dough, wrap in plastic, and chill for 1 hour.
6. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
7. Roll dough on floured surface and cut into shapes.
8. Transfer to baking sheets and chill again for 10 minutes.
9. Bake for 8–10 minutes until edges are set.
10. Cool, then decorate as desired.
Notes
Chilling the dough twice ensures cookies hold their shape.
Store in an airtight container for up to 1 week.
Dough can be frozen up to 2 months—thaw in fridge overnight.
