1/2 cup melted butter
1/4 cup granulated sugar (crust)
1/2 egg yolk
2 tablespoons sugar (for emulsion)
3/4 cup granulated sugar (filling)
1 cup fresh lemon juice
1/4 cup cornstarch
1 teaspoon vanilla extract (clear)
Whipped cream for topping
Instructions
Crush graham crackers in food processor for 10 seconds maximum
Mix with melted butter and 1/4 cup sugar until combined
Press mixture firmly into a 9-inch springform pie dish
Freeze crust for 20 minutes while preparing filling
Whisk egg yolk with 2 tbsp sugar until light yellow
Add ¾ cup sugar, 1 cup lemon juice, cornstarch, and vanilla to bowl
Chill mixing bowl beforehand for better emulsion
Pour filling over pre-chilled crust
Smooth top with offset spatula
Freeze 4 hours until firm
Top with chilled whipped cream before serving
Cut with a warm, damp knife for neat slices
Notes
Honey can replace granulated sugar in filling
Add grated lemon zest to filling for enhanced flavor
Press crust into corners of dish to prevent air pockets
