Ingredients

½ lb dark chocolate chips

12 tbsp unsalted butter

1 cup granulated sugar

4 large eggs

2 tsp vanilla extract

1 tsp almond extract

½ tsp kosher salt

½ cup cocoa powder

1 jar (13–14 oz) preserved cherries, drained and halved

For Serving:

Cherry jam

Freshly whipped cream

Rose petals (optional)

Instructions

1. Preheat oven to 350°F.

2. Grease an 8-inch cake pan and line with parchment.

3. Melt chocolate and butter gently over a double boiler.

4. Whisk in sugar until smooth.

5. Add eggs one at a time, whisking well.

6. Mix in vanilla, almond extract, and salt.

7. Fold in cocoa powder.

8. Gently fold in halved cherries.

9. Pour batter into prepared pan.

10. Bake 35–40 minutes, until just set.

11. Let cool for 10 minutes before serving.

Notes

Letting the cake rest allows the texture to set properly.

Serve with whipped cream and cherry jam for the best contrast.

Not suitable for freezing due to fudgy texture.
