Ingredients
**Espresso Cream Layer**
8 oz mascarpone cheese, softened
½ cup heavy cream
¼ cup powdered sugar
2 tbsp brewed espresso (cooled)
1 tsp vanilla extract
**Chocolate Cookie Crust**
1½ cups chocolate cookie crumbs
⅓ cup melted butter

Instructions
1. Combine chocolate cookie crumbs and melted butter. Press into the base of serving cups and chill.
2. In a bowl, whip mascarpone, espresso, sugar, and vanilla until smooth.
3. In a separate bowl, whip cream until stiff peaks form. Fold into espresso mascarpone mixture.
4. Spoon or pipe filling over crust in each cup.
5. Chill for at least 2 hours until set.
6. Top with chocolate shavings, cocoa powder, or coffee beans before serving.
Notes
Use high-quality espresso or espresso powder for best flavor.
Do not overwhip mascarpone to avoid grainy texture.
