Ingredients
1 box vanilla cake mix
1 cup cold brew coffee (unsweetened)
8 oz mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar
1 tsp vanilla extract
2 tbsp cocoa powder
Dark chocolate shavings (optional)
Instructions
1. Bake the vanilla cake in a 9×13 pan following box instructions. Let cool.
2. Mix cold brew with a splash of vanilla, then poke holes in the cake and pour coffee evenly.
3. Whip mascarpone, heavy cream, powdered sugar, and vanilla until soft peaks form.
4. Spread the mascarpone mixture on the cooled cake.
5. Dust with cocoa powder and top with chocolate shavings.
6. Chill for at least 2 hours before serving.
Notes
Use strong brewed coffee or espresso for deeper flavor.
Can be made a day in advance—flavors improve overnight.
Add coffee liqueur alternative like brewed chicory or hazelnut extract if desired.
