Ingredients

8 oz penne pasta

1 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups baby spinach

1/2 cup cream cheese

1/4 cup reserved pasta water

Salt and pepper to taste

Grated parmesan (optional)

Instructions

1. Cook pasta until al dente. Reserve some cooking water before draining.

2. Heat olive oil in a skillet, sauté garlic for 1 minute.

3. Add cherry tomatoes and cook until softened.

4. Stir in spinach until wilted.

5. Lower heat and mix in cream cheese.

6. Add reserved pasta water to loosen the sauce.

7. Combine drained pasta with the sauce.

8. Season with salt, pepper, and optional parmesan.

9. Serve hot with garnish.

Notes

Use Greek yogurt as a lighter substitute for cream cheese.

Frozen spinach can be used—just thaw and drain well.

Adjust pasta water based on your desired sauce consistency.
