Ingredients
2 cups cooked shredded chicken
1½ cups shredded cheddar or Mexican blend cheese
4 large flour tortillas ½ cup chopped bell peppers (optional)
2 tablespoons chopped green onions (optional)
1 teaspoon cumin
1 teaspoon olive oil per quesadilla
Instructions
1. Heat a skillet over medium heat and brush with oil.
2. Lay one tortilla flat and sprinkle with cheese, chicken, and any extras.
3. Top with more cheese and another tortilla (or fold if using one).
4. Cook 2–3 minutes per side until golden and crisp.
5. Remove, rest for a minute, and slice into wedges.
6. Serve warm with salsa, sour cream, or guacamole.
Notes
Use leftover chicken or rotisserie for ease. Add jalapeños or chili flakes for heat. Pairs well with black beans or seasoned rice.
