Ingredients
1 cup finely shredded carrots
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup rolled oats
1/2 cup chopped walnuts or pecans (optional)
1/4 cup raisins or coconut flakes (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream together butter, brown sugar, and white sugar until light and fluffy.
3. Add egg and vanilla; mix until combined.
4. In a separate bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
5. Gradually mix dry ingredients into the wet mixture.
6. Fold in carrots, oats, and optional mix-ins.
7. Scoop dough into balls and place on the baking sheet.
8. Bake for 10–12 minutes or until edges are lightly golden.
9. Let cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
For extra chewiness, chill the dough for 30 minutes before baking.
Use freshly grated carrots for the best texture.
Store in an airtight container for up to 5 days or freeze for up to 3 months.
