This fresh and creamy strawberry cake is a light, crowd-pleasing dessert layered with whipped cream and juicy berries — ideal for summer days.

  • Total Time: 30 minutes
  • Yield: 8 slices 1x

Ingredients

Scale

2 cups fresh strawberries, sliced

2 tablespoons granulated sugar

1 store-bought or homemade sponge cake

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Instructions

1. Slice the strawberries and mix them with granulated sugar. Let them sit for 15–30 minutes to release juices.

2. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

3. Carefully slice the sponge cake using a serrated knife into layers.

4. Start layering: add a base of cake, top with whipped cream and macerated strawberries.

5. Repeat the layers until all components are used.

6. Refrigerate the assembled cake for 10–20 minutes before serving.

Notes

Chill the mixing bowl and whisk before whipping cream for best results.

Do not freeze the fully assembled cake.

For a festive twist, add blueberries or pomegranate.

Use coconut cream for a dairy-free version.

Serve with citrus tea or sparkling lemonade.
