Ingredients

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, diced

1/4 cup fresh basil leaves, chopped

2 tbsp olive oil

2 cloves garlic, minced

1 cup shredded mozzarella cheese (optional)

2 tbsp balsamic glaze (optional)

1 tsp salt

1/2 tsp black pepper

Juice of 1/2 lemon

Instructions

1. Season chicken with salt, pepper, olive oil, and lemon juice.

2. Heat a skillet or grill pan, cook chicken until golden on both sides and fully cooked.

3. In a bowl, combine tomatoes, basil, garlic, olive oil, and season lightly.

4. Top hot chicken with tomato mixture, add mozzarella if desired.

5. Drizzle balsamic glaze before serving.

Notes

For meal prep, cook chicken in advance and add tomato topping just before serving. USDA recommends chicken reaches 165°F (74°C) for safe consumption.
