Ingredients
4 boneless, skinless chicken breasts
2 cups cherry tomatoes, diced
1/4 cup fresh basil leaves, chopped
2 tbsp olive oil
2 cloves garlic, minced
1 cup shredded mozzarella cheese (optional)
2 tbsp balsamic glaze (optional)
1 tsp salt
1/2 tsp black pepper
Juice of 1/2 lemon
Instructions
1. Season chicken with salt, pepper, olive oil, and lemon juice.
2. Heat a skillet or grill pan, cook chicken until golden on both sides and fully cooked.
3. In a bowl, combine tomatoes, basil, garlic, olive oil, and season lightly.
4. Top hot chicken with tomato mixture, add mozzarella if desired.
5. Drizzle balsamic glaze before serving.
Notes
